“Black Sea Salmon Trout” is the name by which the so-called “Rainbow Trout” (Oncorhynchus Mykiss) raised in the waters of the Black Sea is known. Attempts to cultivate it began in the late 1960s, and the lower temperature and low salinity of the water compared to that of the Mediterranean Sea turned out to be the ideal environment for cultivating this fish!
Today, Black Sea Salmon Trout (also called “Black Sea Salmon” in Turkey) is known and appreciated for its excellent taste all over the world .
Unfortunately, this fish is poorly known in Bulgaria. That's why we decided it was high time to present it in a proper way: true to our mission to develop the Black Sea culinary tradition, without compromising on the responsible attitude towards our sea, nor on the quality of the food we put on the table.
To do this, we are partnering with one of the innovators in ecological aquaculture in Turkey. We chose to work with them after personally witnessing their fish farming standards, which far exceed the “standard” practices of the mass aquaculture segment . As well as the fact that we share with our partners the vision of sustainable fisheries, developing hand in hand with the care of the Black Sea ecosystems.

The menu of our Black Sea salmon trout consists of species that would be part of its menu in the wild - mostly small fish species. In order to avoid the use of antibiotics in its cultivation, natural biostimulants are used to reduce the risks of diseases.
The farm's location itself is in one of the cleanest and most untouched by industrialization areas of our sea, with constant strict monitoring of water quality .
Due to the low salinity of our sea, the meat of the Black Sea Salmon Trout is dense and firm, while retaining its superb delicate taste. In addition to being very tasty, it is also extremely rich in Omega 3 fatty acids, proteins and important microelements for our body. You will recognize it by its distinctive pink-orange color. Once you try it, we guarantee that you will remember its taste - and you will hardly want to go back to “regular” salmon!
