Ingredients
- 1 medium carrot (about 100 g)
- ¼ small onion (about 20 g)
- 1 small clove of garlic
- 2 tablespoons oil
- 1 tablespoon vinegar
- 1 tablespoon sesame seeds
- 2 sprigs of fresh onion (about 10 g)
- 1 teaspoon of sugar (about 10 g)
- Smoked bonito

½ teaspoon red pepper (about 5 g)
Preparation
- Grate the carrots, season with a pinch of salt and put them in the refrigerator.
- Dice the onion and add it to the oil over medium heat. Cook for about 10 minutes until the oil absorbs the onion flavor.
- In a bowl, mix the sugar, paprika, and sesame seeds, then add the strained oil from the onion.
- Mix the carrots with the resulting paste and add vinegar to taste.
- Leave the salad in the refrigerator for a day.
- The next day, add the smoked bonito and garnish with the green part of the spring onion.
