Asian salad with smoked bonito

Ingredients

  • 1 medium carrot (about 100 g)
  • ¼ small onion (about 20 g)
  • 1 small clove of garlic
  • 2 tablespoons oil
  • 1 tablespoon vinegar
  • 1 tablespoon sesame seeds
  • 2 sprigs of fresh onion (about 10 g)
  • 1 teaspoon of sugar (about 10 g)
  • Smoked bonito
  • ½ teaspoon red pepper (about 5 g)

Preparation

  1. Grate the carrots, season with a pinch of salt and put them in the refrigerator.
  2. Dice the onion and add it to the oil over medium heat. Cook for about 10 minutes until the oil absorbs the onion flavor.
  3. In a bowl, mix the sugar, paprika, and sesame seeds, then add the strained oil from the onion.
  4. Mix the carrots with the resulting paste and add vinegar to taste.
  5. Leave the salad in the refrigerator for a day.
  6. The next day, add the smoked bonito and garnish with the green part of the spring onion.
