Smoked Black Sea Salmon Trout Fillet - about 20 g

Cottage cheese or other cheese of your choice - 80 g

Avocado - 1 piece

Freshly squeezed lemon juice

Arugula - 1 handful

Olive oil - 1/2 tbsp

Sourdough bread - 1 slice, about 40-50 g

Egg - 1 piece

Sumac for sprinkling

Apple cider vinegar - 2-3 tbsp
Preparation
1. Heat a non-stick pan, add olive oil, and toast the bread until crispy.
2. While hot, add the cottage cheese. You can rub the bread with the garlic clove beforehand.
3. Next, add the mashed avocado seasoned with lemon juice and salt to taste.

5. Two fillets of smoked salmon trout
6. Next, prepare the poached egg: heat water with 2-3 tablespoons of apple cider vinegar. When it boils, reduce the heat to low so that the water only has small bubbles. With a wooden spoon, swirl the water in the pot to create a stable vortex. Crack the egg into a small tea strainer to drain the thinner part of the egg white, then transfer it to a small bowl and carefully lower it into the water vortex, continuing to swirl the water if desired.
7. It needs exactly three minutes for a perfectly runny yolk.
8. Remove the egg with a slotted spoon and place it on kitchen paper to drain any excess water.
9. Place it on your sandwich, sprinkle with sumac, carefully slice the yolk with a very sharp knife, and enjoy.
