Summer salad with bonito

Ingredients
- Bonito – 1 jar of Black Sea Bonito with aromatic herbs
- pickles – 200 g
- red onion – 1 head
- capers – 50 g
- chili peppers – 1 pc.
- leek
- white bread – ciabatta
Preparation
1. Chop the pickles, red onion, and capers very finely.
2. Mix them and season them with the fat from the marinated bonito to get a "naked" Tartar sauce.
3. Cut the leek into very thin julienne strips and carefully fry it in oil at 140 degrees.
Serving
You place some "naked" Tartar on a slice of bread, then a bonito fillet. You finish the fish salad with fried leeks and a little chili pepper.
